CLAM
CHOWDER

cup onions (diced)
1/3
cup celery (diced)
1/3
cup leeks (diced)
1/3
cup green peppers (diced)
1/2 cup
chopped clams
1/3
cup potatoes (diced)
1 ounce
flour
1
ounce butter
1
pinch: thyme, salt, pepper (to taste)
1/2
of a bay leaf
1
ounce white wine (dry)
3
ounces light cream
1
quart water from fish stock
Melt the butter in
saucepan and add onions, leeks, celery, green peppers. Cook
until golden brown. Add flour, mix
together and cook slowly for 12 minutes. Add
stock and season with salt, pepper, bay leaf and thyme.
Bring to a boil and add potatoes and wine.
Simmer for 30 minutes. Add
clams and cook for an additional 5 minutes. Before
serving, stir in the hot cream.
