In the 1980s, the chefs at La Famiglia Restaurant made their own pasta.  They also had fresh fish flown in from Boston.  Their chef took pride in his delectable fish dishes and provided his favorite recipe for Shrimp Scampi Principessa.  This shrimp dish will be one your friends and family will all enjoy.

 

SHRIMP SCAMPI PRINCIPESSA

8    shrimp

1/2 cup white wine

Aquavit  

Sauce

1    cup sour cream

2    teaspoons lumpfish or caviar (black)

2    strips chives, chopped fine

1    pinch white pepper  

Poach shrimp in white wine for 5 minutes.

Prepare a cold sauce by mixing cream, caviar, chives and pepper.

Drain shrimp, then flambé with Aquavit.

Place shrimp in cold sauce.  Serve and enjoy.
