The Marrakesh, a restaurant with a Moroccan décor, offered an
authentic Moroccan cuisine. The
exotic cuisine provided an unforgettable dining experience for the clientele.
The chef provided his recipe for B’Stilla
which will bring a bit of
Morocco to the family dining table.
B’STILA
This recipe serves six.

2-lb. chicken
Salt to taste
2
cups chopped onions
Pepper to taste
1
cup chopped parsley
5 eggs
1
pinch saffron
2 cups roasted
ground almonds
1/2 cup
sweet butter
1 cup granulated
sugar
1/2 quart
water
1/2 teaspoon cinnamon
4 layers of filo dough
1/2 cup
powdered sugar
1 tablespoon cinnamon
In a pot combine chicken,
onions, parsley, butter, water and all the spices and cook on a low flame for
about 45 minutes. When chicken is
cooked, remove from pot and let cool.
Scramble 5 eggs in sauce
of chicken and cook for 12 – 15 minutes. De-bone
chicken and cut into small pieces. Mix
almonds with sugar and cinnamon.
Brush a 12-inch diameter
frying pan with melted butter. Lay
filo dough in pan, making sure that about 5 inches of the dough rises above the
pan. In the following order, put a
layer of almonds, a layer of chicken, layer of almonds, layer of eggs.
Repeat until pan is full. Fold
the outside filo dough to center of pan and bake for 15 minutes in 400 degree F.
oven.
To serve, put B’Stila
down on a nice platter. Top with
powdered sugar and try to make a decorative design with cinnamon.
Serve hot.
