VALENTINO

Valentino is another restaurant in the '80s which was a favorite of many famous personalities.  This restaurant not only had an impressive wine cellar, but their Italian cuisine made it one of the best known Italian restaurants in America. Valentino has also been hailed as one of the best Italian restaurants in the whole world! 

VEAL LUISA

Serves 6 people

12  scaloppini of veal

2    ounces imported Porcini mushrooms (dry)

12  pieces thinly sliced ham, size of veal

3    shallots

1    clove of garlic

1    small onion

1    teaspoon thyme

5    ounces dry Marsala

5    ounces whipping cream

Salt and pepper

2    eggs. beaten

3    teaspoons all purpose flour

12  slice Mozzarella cheese

24  slices pimento

Oil

Soak mushrooms for 1/2  hour in tepid water, chop.  Chop garlic, shallots, and onion.  Sauté in 1 tablespoon butter, 2 tablespoons oil.  Add chopped mushrooms, 1 tablespoon flour and mix well.  Add Mayala and whipping cream, salt and pepper to taste and cook 2 – 3 minutes.  Reserve as stuffing for veal.

Dust veal with remaining flour.  Dip in egg and sauté in pan with 1 tablespoon butter and 1 tablespoon of oil, one minute on each side.  Sprinkle with thyme and remove from heat.  Top each veal scallop with 1 heaping tablespoon of stuffing, slice of ham and cheese.  Add white wine and return to heat.  Top with pimento.  Cover pan and cook over medium heat 1 minute or until cheese melts.  Serve immediately.
